Peanut Butter Chocolate Chunk Cookies
With temptation everywhere you turn, sometimes the best strategy is to have low-calorie treats available for when cravings are tough to beat. This recipe for chocolate peanut butter cookies is a low-calorie alternative when you need to treat yourself, courtesy of Prevention magazine.
Peanut Butter Chocolate Chunk Cookies
1/4 cup plus 2 tbsp. brown sugar
1 egg yolk
1/3 cup trans fat free vegetable shortening
1/4 cup chunky peanut butter
1/2 tsp. vanilla
1/2 cup flour
1/2 tsp. baking powder
1/8 tsp. salt
2 oz. semisweet baking chocolate, in chunks
Preheat oven to 350 degrees. Line baking sheets with parchment. Cream together sugar, shortening, peanut butter, egg yolk and vanilla. Add flour, baking powder and salt; stir until combined. Divide into 36 cookies, approximately 1 tsp. each. Place on baking sheet and press down to 1/4” thickness. Bake until golden, 9 to 11 minutes, and press chocolate chunk onto centre of each cookie after removing from oven.
Three cookies contain approximately 141 calories, so it’s a relatively guilt-free treat.
